The meat processing industry is very atomized and composed at the same time by big manufacturers in the industrial side as well as small SME´s (90%) processing their tailor-made range of products for the proximity market. These SMEs are highly specialised and operate independently at different stages of the supply chain.
Traditional / artisanal products are more costly to produce because of the higher quality of raw materials, production process and scale. Also, the final product it is more difficult to preserve. At the same time, consumers are demanding more natural/organic and varied products and they are ready to pay more for them. Traditional (artisanal) processors and retailers can satisfy the new consumers concerns but they suffer from a non-competitive cost structure since new technologies has not yet impacted this SME industrial segment.

BIOMAINCA will allow small producers of sausages, hamburgers, and other processed meat to automatize production of natural food products at a constant temperature of 2°C, while maintaining their local and traditional taste unchanged.
BIOMAINCA will help to promote the SME dedicated to the artisanal elaboration of meat products increasing productivity by 45%.
BIOMAINCA plays an important role in meeting the social demand to eat natural, healthy products, reducing consumer’s exposure to chemicals and/or allergens.
BIOMAINCA will help to offer a large variety of products to the market with a wide range of traditional and artisanal receipts.

Due to the work carried on during Phase 1, we’ve considerably progress in the product prototyping and we have solved many technical challenges. Some validation in operational conditions are still pending but it is scheduled for the second half of 2020. In this Phase 1 we have been also capable to collect concrete evidences about the advantages that BIOMANICA will bring to the market compared with current solutions. We have validated main hypothesis about customer needs and requirements to fine tune our product and commercial strategy.
In the state of art we can find some solutions and technologies based in refrigeration and vacuum equipment’s applied to very big production lines inside big industrial facilities, what BIOMAINCA project brings to the market is a modular and affordable solution for small and medium processors which are far from innovation. Meat processors will obtain the capacity to produce and storage the product in interchangeable sealed containers under vacuum conditions. This ingenious solution has never been developed in the market so can be protected by patent. The impact for our society will be:
- Increase the productivity of 80.000 artisans allowing them to compete in the market and keep generating employment
- Maintain an offer in the market of high quality and organic products elaborated with traditional, artisanal or gourmet receipts.
- Lowering food waste as we increase help life and preservation of products and we optimize production shifts.
- Reduce the amount of chemical additive in the meat process products helping population health reducing allergies and side effects.
- Decreasing water and electricity consumption during production process avoiding constant cleaning of equipment and more efficient machines
In conclusion with BIOMAINCA we will save employment and improve health, nutrition, and good taste of products.
